Paça, also known as groom’s trotter in Turkey, is one of the important flavors of Albanian cuisine. Like trotters and baklava, it consists of very thin layers of dough that are carefully rolled out. In this respect, it is not a very easy dish or pastry. The main ingredients are phyllo dough, meat, broth, yoghurt, garlic and red pepper (tomato paste). The reason why it is known as the groom’s trouser is because it is tied to a tradition. Albanians invite their sons-in-law to their homes for dinner in the first week of marrying their daughters. As we mentioned before about baklava, homemade baklava is definitely included in this groom’s dinner. This is the use of carefully rolled phyllo dough, which is the main ingredient of baklava, for another food. In other words, if making baklava, leftover or slightly more prepared phyllo dough is used. It is known how difficult it is to roll out dough. As we said, it is served with baklava at the groom’s dinner.

GROOM CLOTH RECIPE:
MATERIALS
To boil the chicken;
6-8 chicken drumsticks
1 carrot
1 onion
8-10 black peppercorns
1 bay leaf
7-8 glasses of water
Ingredients for phyllo;
3 phyllo dough
Half a glass of oil
2-3 cups chicken broth
For the yoghurt sauce;
2 spoonful butter
2 tablespoons of flour
1.5 glasses of water
3 tablespoons of yoghurt
1 egg
1 clove of garlic
Salt
Ingredients for the sauce;
Butter
chili pepper
FABRICATION
While boiling chicken drumsticks:
Put the chicken drumsticks into the pot.
Add the roughly cut carrots and onion to the pot.
Add bay leaves, black peppercorns and water and boil until the chicken is soft.
While preparing the dough:
Divide the dough into pieces 3 fingers wide.
Place the phyllo dough overlapping each other in the baking dish and spread oil between them.
Fry the phyllo dough in a preheated oven at 200 degrees for about 25 minutes.
While preparing yoghurt béchamel:
Put the butter in the pot and melt it well.
Add the flour and roast until the smell disappears.
In a separate bowl, mix water, egg, yoghurt and finely chopped and crushed garlic with the help of a wire whisk.
Add this mixture slowly into the pot and cook until it reaches the consistency of béchamel.
When combining all ingredients:
Shred the meat of the boiled chickens. Then add salt and pepper and set aside.
Remove the fried dough from the oven. Pour about 4 ladles of chicken broth over it and soak it.
Place the shredded chicken meat on the soaked phyllo dough.
Finally, pour the yoghurt béchamel sauce on top.
Put it back in the oven and cook for another 7-8 minutes until the water evaporates and the bechamel turns a light brown color.
Melt the butter in a small pan and add red pepper flakes.
Take it out of the oven and pour the sauce all over and serve.
