Paça, also known as groom’s trotter in Turkey, is one of the important flavors of Albanian cuisine. Like trotters and baklava, it consists of very thin layers of dough that are carefully rolled out. In this respect, it is not a very easy dish or pastry. The main ingredients are phyllo dough, meat, broth, yoghurt, garlic and red pepper (tomato paste). The reason why it is known as the groom’s trouser is because it is tied to a tradition. Albanians invite their sons-in-law to their homes for dinner in the first week of marrying their daughters.
