One of the things that comes to mind when pastry is mentioned is the address, which is one of the tastes of Adıyaman region. Hatap, which can be eaten at every meal of the day, is prepared with all kinds of internal mortar. The preferred address with onions, especially in spring and summer; It is also made with cheese, cottage cheese, butter, minced meat, roasted potatoes, boiled potatoes or various herbs. However, onion, which is used as a flavoring in all dishes, is also a favorite of the addressee.
Hatap, which cooks quickly with the preparation of the inner mortar, can also be easily made at home. A dough is obtained by kneading the address obtained with the flour, salt and water required for the main material of the dough. Adiyaman’s favorite address, which is obtained by combining the inner mortar with the dough, is cooked in 15-20 minutes.
HOW TO MAKE HITAP DINNER;
For the dough:
6 cups of flour
1.5 teaspoons of salt
3 cups of warm water
1.5 teaspoons of instant (dry) yeast
For internal mortar:
500 gr curd cheese
2 pieces of lavash cheese (cottage cheese 250 gr)
1 teaspoon paprika
1 teaspoon salt
1 teacup of oil
500 g green onions (male onion)
Pour flour, salt and yeast into a large bowl and knead by adding water gradually.
Cover the dough with the consistency of earlobes with a cloth and leave to ferment for at least an hour.
While the dough is resting, prepare the inner mortar of the dough.
Grate the village cheeses, chop the onions into small rings without crushing them, wash and strain to remove the bitter juice.
Pour the curd cheese, grated village cheese, chopped onions, salt, red pepper flakes and oil into a bowl and mix well.
Cut and roll pieces of the dough that are slightly larger than the egg.
Sprinkle flour on the counter and roll out the dough in a thin circle.
Put 2 tablespoons of the mortar we obtained in the middle of the dough, fold it in half in the form of çibörek and close it.
Cook the half-moon shape in a non-flammable pan without adding oil.
